Vegan cooking challenge - using New World ingredients only?

This is a great question. I love to cook, but I've never approached recipe--making from within the boundaries of New World ingredients. I've tried preparing a meal with only *biblical* ingredients, but not like this. I'm hoping you get dozens more recipes from folks far more creative than I.
